Pick tomatoes when they are bright red. Fresh tomatoes are very good for you, since they contain both vitamin A and vitamin C. Use the last of the summer tomatoes from your garden or farmers’ market tomato this tasty sauce. Try it for dinner over pasta or chicken.

You Will Need:
½ yellow onion
1 stalk celery
1 bell pepper
6 medium tomatoes
1 tablespoon olive oil
1 teaspoon sugar
Salt and pepper to taste
Directions
1. Wash your hands. Chop up all of the vegetables.
2. Heat the olive oil over medium heat in a large pan.
3. Carefully add the chopped vegetables.
4. Simmer vegetables, stirring occasionally, until they become soft.
5. Take the pan off of the stove and let veggies cool.
6. Place the veggies in a blender and puree until mostly smooth.
7. Season with sugar and pinches of salt and pepper.
8. Warm sauce to serve over pasta or chicken.
