Fruity Sushi

Maybe the raw fish and seaweed in sushi aren’t quite your thing. Or maybe you’re a fruit lover. Then this recipe is perfect for you! It’s colorful, sweet, refreshing, and looks a lot like sushi—minus the fish and seaweed!

You Will Need:
• 1 cup (uncooked) sushi rice
• 1 tablespoon mango juice
• ½ cup mixed fruit slices (strawberries, peaches, blueberries, or raspberries)


Directions:

1. Cook the rice, following the directions on the package. Make sure it’s cool before you continue.

2. Put the rice in a bowl. Add the mango juice and mix until the rice becomes sticky.

3. Scoop out a spoonful of rice and form little rice boats with your hands. They should look like small trays with sides.

4. Top each rice boat with a piece or two of fruit. Press the fruit gently onto the rice.

5. Arrange your fruity sushi on a plate and serve immediately.


Directions for sushi rolls:

1. Spoon rice onto a piece of plastic wrap.

2. Put another piece of plastic wrap over the rice and flatten it into a square.

3. Remove the plastic wrap.

4. Line up the fruit 1 inch from the edge of the rice.

5. Roll the rice up around the fruit. Squeeze the roll and pull the plastic off as you go.

6. Remove the plastic wrap and cut the roll into slices.
