Tabbouleh is a traditional Middle Eastern salad and a refreshing summer treat. Serve it on lettuce, or eat it with pita bread and hummus. Ask an adult to help you chop the vegetables and herbs in this recipe! This salad will be more flavorful if it sits for a few hours.
You Will Need:
• 1 cup bulgur wheat, washed
• 2 cups water
• 2 cups tomatoes, seeded and chopped
• 1 cup green onions, finely chopped
• 2 cups parsley, washed and finely chopped
• ½ cup fresh mint leaves, finely chopped
• 1 cucumber, diced
• salt and pepper
• allspice
• 1 tablespoon sumac (optional)
• juice of 2 lemons
• ¼ cup extra-virgin olive oil
Directions:
1. Put the bulgur in a bowl. Heat the water in the microwave until it’s hot, but not boiling, about 1½ minutes.
2. Carefully pour the hot water over the bulgur. Cover the bowl with a plate or plastic wrap and let it stand for about 45 minutes.
3. Combine all the vegetables in a large bowl and season with salt, pepper, sumac, and a dash of allspice.
4. When the bulgur is done soaking, drain it in a strainer, pressing it with a spoon to squeeze out the water.
5. Add the bulgur and lemon juice to the vegetables, and mix.
6. Drizzle with olive oil just before serving. Makes four to six servings.
